Trio of dips served with homemade chips

Ingredients - makes small tub of each


Peach salsa


  • 11/2 medium tomato, diced

  • 1 bell pepper, seeded and finely diced

  • 1 jalapenos, seeded and finely diced

  • 1 medium onion, finely diced

  • 3 medium peaches, diced

  • 2 Tbsp lime juice

  • 1 1/2 tsp salt, or to taste

  • 1/4 tsp freshly ground black pepper or to taste


Guacamole


  • 1 large ripe tomato

  • 2 avocados

  • 1 lime

  • 1 small red onion, finely chopped

  • 1 chilli

  • 2 tbsp of fresh corriander


Tomato salsa


  • 2 tomatoes, peeled and finely chopped

  • ½ red onion, very finely chopped

  • 1 small garlic clove, chopped

  • small splash white wine vinegar

  • ½ lime, juice only

  • ½ bunch coriander, roughly chopped

  • Spring onion to top


Chips


  • 1kg potatoes

  • 3 tbsp olive oils

  • Salt and pepper

  • Thyme


Method


  • Slice potatoes, drizzle with oil, thyme, salt and pepper. Cook until crispy (about 45 mins)

  • peach salsa, chop everything add the lime juice, salt and pepper

  • tomato salsa, chop everything add the vinegar and lime juice and top with spring onion

  • Guacamole chop everything, mash the avocado and add the lime juice!
