Ingredients - Serves 4
1 tbsp olive oil
2 shallots, sliced
3 garlic cloves, sliced
800g fresh gnocchi
400g peas
400g Creme fraiche 100ml vegetable stock
100g cheese, grated (vegan or non)
Top with bulgur wheat and bean sprouts
Method
Preheat the oven to 200C/180fan. In a large frying pan, heat the olive oil and soften the shallots and garlic for 5 minutes.Bring a large pan of salted water to the boil and cook the peas.
Cook bulgur wheat using packet instructions
Fry the shallots and then add in the Garlic and creme fraiche, stock and seasoning. Add in the gnocchi and 50g of the cheese and mix all together.
Tip into a baking dish and then top with the cheese. Bake in the oven for 15 minutes or until golden.
Top with bean sprouts and bulgur wheat.
