Pea Gnocchi

Ingredients - Serves 4


  • 1 tbsp olive oil

  • 2 shallots, sliced

  • 3 garlic cloves, sliced

  • 800g fresh gnocchi

  • 400g peas

  • 400g Creme fraiche 100ml vegetable stock

  • 100g cheese, grated (vegan or non)

  • Top with bulgur wheat and bean sprouts



Method


  • Preheat the oven to 200C/180fan. In a large frying pan, heat the olive oil and soften the shallots and garlic for 5 minutes.Bring a large pan of salted water to the boil and cook the peas.

  • Cook bulgur wheat using packet instructions

  • Fry the shallots and then add in the Garlic and creme fraiche, stock and seasoning. Add in the gnocchi and 50g of the cheese and mix all together.

  • Tip into a baking dish and then top with the cheese. Bake in the oven for 15 minutes or until golden.

  • Top with bean sprouts and bulgur wheat.
