Scrambled Tofu and Teriyaki Mushrooms on Toast

Ingredients - Serves 1


  • 2 Slices of toast

  • Vegetable spread (optional) - I used coconut spread by Coconut merchant

  • Mushrooms

  • 2 Tbsp Teriyaki liquid sauce

  • 3 Spring onions

  • 1 Medium red onion

  • 150g Silken tofu

  • Salt and pepper to season

  • Handful of spinach
