Rainbow granola cups

Ingredients - makes 5


  • 250g coconut yogurt

  • 2 tbsp coconut oil - I used Pipkin

  • 1 tbsp açai powder - I used Iswari

  • 1 tbsp salted caramel protein powder - I used Vitally Vegan

  • 2 tbsp carrot juice - I used Benefit drinks

  • 1 tbsp maca powder - I used Iswari

  • 1/2 tbsp spriulina - I used Iswari

  • 150-200g Granola - I used Raw Gorilla raspberry flavour

  • 2 1/2 tbsp honey coconut syrup - I used coconut merchant's

  • Topped with nuts and seeds - I used Whitworths


Method


  • Blend the granola and coconut oil, put into cupcake cases and freeze until solid

  • Split the yogurt into 5 portions, mix in equal amounts of syrup to each one. Then mix in one flavour for each e.g açai for one, salted caramel for another

  • Top with nuts and seeds and then freeze!

  • Let melt slightly before eating!
