Rainbow Burritos

Ingredients - makes 4 burritos


  • 4 wraps

  • 1 Tin sweetcorn (400g)

  • 1 Tin black eyed beans (400g)

  • 1 1/2 cups black rice - I used Mr Organic

  • 1/2 jar of chutney - I used Smoked tomato and garlic from Cherry Tree preserves

  • 500g alternative protein eg. tofu - I used Pulled peaz from lazy vegan

  • 4 Handfuls of rocket

  • 1 Bunch spring onion



Method


  • Lie the wraps out on a piece of tin foil larger than the wrap

  • Spread on a thick layer of chutney

  • Layer on 1/4 of all the other ingredients

  • It will look really full but it is possible to roll! Fold in the right and left bits of the wrap and then roll the bottom of the wrap up to the top

  • Then roll the wrap in the tin foil tightly and tuck in the edges. Cut the burrito in half!
