Loaded sweet potato fries

Ingredients - Serves 1


  • 1 Sweet potato

  • A few black olives

  • 1 Tbsp of cress

  • 200g mixed beans - I used haricot, kidney beans and butter beans

  • 150g passata

  • 1 tbsp bbq sauce

  • 2 Tbsp Zhoug paste from Belazu

  • 1 Tbsp spring onion

  • 1 Tbsp Worcestershire sauce

  • Salt and pepper seasoning

  • 2 tbsp olive oil

Method


  • Slice the potato into long chips, cover with oil, salt and pepper and bake in oven until cooked (about 40 min)

  • In a saucepan heat the beans (precooked), with passata, bbq sauce and Worcestershire sauce

  • Pour the beans over the fries, topped with spring onion, olives, cress and Zhoug paste
