Green Salad

Ingredients 

SERVES 2 

- 400g Broad beans

- 400g Garden peas

- 2 Tbsp fermented red cabbage

- 2 Handfuls of spinach 

- 1 Large red onion

DRESSING 

-  3 Tbsp extra virgin olive oil 

-  1 tablespoon white wine vinegar (or balsamic, apple cider, rice, sherry, or other wine vinegar)

- Pinch of salt and the same for pepper





Method

- Cook the peas and broad beans

- Finely chop the onion 

- Wash the spinach 

- Mix together all the dressing ingredients

- Mix together the veggies and beans, top with red cabbage and pour over the dressing 

- Enjoy!
