Falafel and hummus sub

Ingredients - serves 2


  • 2 small/medium baguettes

  • 1 tub of hummus - I used Moorish Hummus

  • Around 16 falafels (or enough to fill baguette) - I used ones from GoodLife

  • 1/2 Cucumber (finely sliced)

  • Handful of Spinach

  • 1 Carrot (grated)

  • Handful of radish (finely sliced)

  • Handful of cherry tomato (finely sliced)


Method


  • Cook the falafel is necessary

  • Slice baguette and smother with hummus

  • Arrange the vegetables on the bottom with the falafel on top

  • Put more hummus on top
