Ingredients - serves 2
2 small/medium baguettes
1 tub of hummus - I used Moorish Hummus
Around 16 falafels (or enough to fill baguette) - I used ones from GoodLife
1/2 Cucumber (finely sliced)
Handful of Spinach
1 Carrot (grated)
Handful of radish (finely sliced)
Handful of cherry tomato (finely sliced)
Method
Cook the falafel is necessary
Slice baguette and smother with hummus
Arrange the vegetables on the bottom with the falafel on top
Put more hummus on top
