Ingredients - Serves 1
2 Tbsp Kimchi - I used the Urban Fermentery
1 cup Quinoa
1 cup Spelt - I used full of Goodness pouch
Handful of Black olives
Handful of Cress
1 Tbsp olive oil
1 Tbsp balsamic vinegar
salt and pepper to taste
Method
Cook the spelt and quinoa, mix in the olives, balsamic vinegar and olive oil
Top with cress and kimchi
