Easy Kimichi quinoa salad

Ingredients - Serves 1


  • 2 Tbsp Kimchi - I used the Urban Fermentery

  • 1 cup Quinoa

  • 1 cup Spelt - I used full of Goodness pouch

  • Handful of Black olives

  • Handful of Cress

  • 1 Tbsp olive oil

  • 1 Tbsp balsamic vinegar

  • salt and pepper to taste

Method


  • Cook the spelt and quinoa, mix in the olives, balsamic vinegar and olive oil

  • Top with cress and kimchi
