Cheese and Spinach puff pastry

Ingredients - serves 6

  • 200g Violife cheddar cheese

  • Pre-rolled puff pastry sheet (about 320g)

  • 200g spinach

  • 3 garlic cloves

  • salt and pepper to taste

  • 2 White onions

  • 2 packs of boundless nuts - any cashews, peanuts or creamy nuts will do!

  • 2 Tbsp oat milk - can use any plant based milk



Method

  • Put oven on 180c

  • Chop up the onions and fry in oil until soft, add garlic and cook for another minute

  • Sauté the spinach

  • blend the spinach with the nuts and 1 Tbsp and mix this in with the onions and garlic

  • Lie the pastry out, on half the pastry put the spinach mixture topped with cheese and roll the pastry so a long log forms

  • Cut them into small squares and brush them with the rest of the oat milk

  • Cook until turning slightly brown on top - normally around 15-20 minutes
