Ingredients - Serves 2
2 cups Black rice - I used Mr Organic
Topped with nuts (2 handfuls) - I used chilli and lime nuts by Chika
2 tbsp Chilli tomatoes - I used belazu
3 tbsp Pomegranate vinegar - I used Mr Organic
2 tbsp olive oil
2 handfuls Spinach
2 Carrots (grated)
Salt and pepper to taste
Method
Cook the rice according to packet instructions
Mix the vegetables with the rice and chilli tomatoes
Add the oil, vinegar, salt and pepper
Top with nuts
