Black rice salad

Ingredients - Serves 2


  • 2 cups Black rice - I used Mr Organic

  • Topped with nuts (2 handfuls) - I used chilli and lime nuts by Chika

  • 2 tbsp Chilli tomatoes - I used belazu

  • 3 tbsp Pomegranate vinegar - I used Mr Organic

  • 2 tbsp olive oil

  • 2 handfuls Spinach

  • 2 Carrots (grated)

  • Salt and pepper to taste

Method

  • Cook the rice according to packet instructions

  • Mix the vegetables with the rice and chilli tomatoes

  • Add the oil, vinegar, salt and pepper

  • Top with nuts
