Beetroot Burgers


Ingredients - Serves 8

  • 4 Large beetroot (raw)

  • 4 large sweet potato

  • Salt and pepper

  • 2 Tbsp plain flour

  • 1 Tbsp chili flakes

  • 1 garlic clove

Method

  • Preheat the oven to 180c degrees

  • Peel the potatoes and boil until they are soft enough to mash

  • Grate the beetroot, and then put it into a muslin cloth and squeeze out as much water as you can (a tea towel will work too)

  • Mash the potato and add it to the beetroot, add the flour, chili flakes and garlic and mix into a thick dough

  • Line a baking tray with greaseproof paper or oil, shape the mixture into burger size/shape and bake for 20 minutes

  •  Beetroot contains betaine which lowers blood pressure and may be anti-inflammatory

  • Beetroot also contains nitrates which help prevent bloodclots
