Ingredients
500g beetroot (precooked)
4 Large potatoes
3 Tbsp horseradish (I used one from Cherry tree preserves)
2 tbsp beetroot juice ( I used some from Benefit drinks)
250g coconut yogurt
1 bunch of spring onions
Method
Peel and boil the potatoes
Cut potato and beetroot into small chunks then mix with yogurt, horseradish and beetroot juice
Top with spring onions
